Quiche Recipe



So I mentioned how I was planning to make a quiche on Monday… well, I did it!

And can you believe it, it actually turned out really, really good?

And it was relatively easy. That was a plus.

Below is a recipe I found online for “Easy Broccoli Quiche”. Since I only had mixed veggies, I used those, and some mushrooms instead. I also bought ham to pop in but forgot to add it! The great thing about quiche is that as long as you’ve got something in it, it will taste good 🙂

This recipe says it’s only for one quiche, but my piecrust was totally overflowing by the time I had everything in there, so I say you either need to scale back on the fillings, or increase to fill two pie shells. Oh, and I used a mix of shredded cheeses. Pick the one that tickles your pickle!

Ginger’s Easy Quiche

2 tablespoons butter
1 onion, minced
1 teaspoon minced garlic
2 cups chopped fresh broccoli
1 (9 inch) unbaked pie crust
1 1/2 cups shredded mozzarella cheese
4 eggs, well beaten
1 1/2 cups milk
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter, melted

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
  3. Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.
  4. Bake in preheated oven for 30 minutes, or until center has set.

My quiche turned out really well and I’ve been eating it all week, which is unusual for me! And for those of you that were wondering:

It doesn’t taste like an omlette! 😀
