Make Your Own Egg McMuffin

I have something to confess:

I have recently fallen in love with breakfast sandwiches. I used to hate them but now I can’t get enough of their delicious egg & meat & cheese combination (props if you know where I got that from!)

But you see, it’s an expensive habit. It’s close to $3 nowadays to procure yourself a breakfast sandwich at a fast-food joint. My favourite is at Tim Horton’s, but I also find myself liking the good old-fashioned McDonald’s Egg McMuffin, too. But neither my wallet nor my waistline can handle eating these often. …And they’re not available after 12pm and I like to eat them for dinner! (Yes, my family is odd, we like breakfast foods for dinner)

So I decided to make my own!

I’d like to point out that these are extremely unhealthy, and even though they taste like heaven, I will be submitting this to This Is Why You’re Fat! I estimate they’re somewhere around 500 calories each.

Onto the instructions…

Here’s what you need to make a homestyle breakfast sandwich. Substitute your favourite cheese, breads or meat products as you wish.

Ingredients:

– english muffin
– processed cheese
– sausage round
– 1 egg
– salt & pepper to taste
– ketchup to taste
– margerine or butter

Now it may take a couple of tries to get the timing just right, but here’s the general order of assembly:
  • Fire up your frying pan and start cooking the sausage. Leave some space in the pan for the egg to be added later.
  • Meanwhile, whisk your egg, salt & pepper together in a small bowl with a fork (this is the scrambled part!) and pop your english muffin sides into the toaster.
  • By the time you get that done, check on the meat–if it looks like it’s almost ready, throw your egg on. I tried using a cookie cutter, small round pan, etc. to make a perfect egg round, but it just didn’t work. So I tilt the skillet towards me and drop the egg goo there. It sort of pools in a crescent shape.
  • Once it’s cooked a little bit I just poke & shove the egg around on the skillet with my spatula until it looks like an english muffin-sized blob, and I let it cook.
  • Once your muffins are done, butter them, put the cheese on and add your cooked egg & sausage. Top with ketchup and begin salivating!

This is a real artery-clogger of a breakfast, but it is super-impressive for guests and perfect for soothing your hangover. I don’t know for certain but it might even be ok to freeze, then warm up in the oven or microwave when you need it. (Jenny Craig has a breakfast sandwich that is frozen so I figure mine can be too!)

Please enjoy responsibly!

  1. That. Looks. Delicious.

If you use egg whites only (20cal/egg vs 80), get the BodyWise bread (103cal/muffin), cut out one piece of cheese, and swap sausage for bacon, you'll slim that fucker right down.

And then you can eat two! :3

  2. Hi Ginger! My boyfriend and I are all about the breakfast sandwich too! Our fav is the Bagel B.E.L.T minus the B! Though I have been known to find an Egg McMuffin now and again.

We started making our own also – though neither of us choose the meat option. And I call mine a MAC-muffin since I'm an Irish MAC! Take an egg (or two) drop in some chopped green peppers, a little onion and a carrot or some mushrooms if you see fit. Toast your favourite bagel – ours are the Weight Watchers ones, top with a bit of becel, slice of tomato, some lettuce, a slice of low-fat cheese, about a teaspoon and a bit of mayo or miracle whip, about the same of ketchup and off you go.

Nearly a full serving of veggies in there, a full serving of protein (if you use 2 eggs) a serving of carbs, your dairy, and your serving of fats for the day, and you're actually eating something seriously good for you. We often like these for dinner as well! Breakfast for dinner is so scrumptious I"m not sure why more people don't do it!

  3. YUM! I definitely share the love for a good breakfast sandwich. (Do they have Waffle House in Canada? They serve up a mean breakfast sandwich!! And at any hour!)

Most people roll their eyes when I suggest some low cal alternatives, but I can't resist….try turkey sausage instead of regular and I promise it tastes almost as good! Also, skip the butter and it'll save you a few calories. I usually use one of those canola sprays.

I think it's Jimmy Dean that has the frozen breakfast sandwiches in the store, and I used to buy the "D-lights" line (which uses a whole grain muffin, egg white, low-fat cheese and turkey sausage), and I'm telling you, they're still delicious and nearly half the calories! They're still close to $2 per sandwich though, so I quit buying them. lol.

  4. Wow, that looks delicious, even though I don't like breakfast sandwiches (well, it's the egg white I don't like). I'm sure it fills you up until lunch time! Came over to visit from the Make it from Scratch carnival.

  5. Love breakfast sandwiches. I do try to make them myself when I have the time.
I like to scramble eggs with salsa and raw spinach then add some cheese and put it in a wrap. Yummy and good for you.

  6. You can also cook the egg in the microwave – then it gets the perfect shape. If you're mixing it up anyways, put some butter/oil/margarine/something on the bottom of the bowl (makes it easy to remove), crack your egg (or use the suggestions for egg replacers), and cook it for 90 seconds. You may need up to a minute longer, depending on the microwave, I guess.

Then flip it onto your english muffin / bagel, and it's ready. If you want to reduce the calories, use some bacon bits (add a tsp to the egg for cooking), and you're good to go!

You can also make ahead the sausages and then just reheat those in the microwave as well.

  7. Microwave!!!

Totally didn't even cross my mind, but brilliant!

I can't believe I didn't think of that, lol. I normally cook my eggs in the microwave, but I guess the addition of sausage just threw me off!

Thanks to everyone for their awesome comments and recipe tweaks!

  8. Contrary to popular myth, saturated fat and dietary cholesterol will not clog your arteries. Fake fats (like shortening or margarine) will do that. So enjoy – if you use a whole wheat muffin/biscuit/whatever, and real cheese, this can actually be quite healthy. 🙂
